Hi Everyone!
I have to tell you, I just discovered how to successfully stuff pizza crusts and I’m sure you are going to love this! For those of you who don’t eat your crusts (yes, even in Italy there are those who don’t), you may think twice before leaving them off to the side for those of us (me) who devour them mercilessly. In Italian, it’s called “pizza con cornicone.” Basically, it’s pizza prepared as you like with stuffed crusts to your liking. Here’s my version….get ready!
Maestro, the ingredients please……
– 1 pound (500 gr) sausages of your choice (….If you would like to make your own authentic sausages, I’ll show you how here =)
-1 large onion, diced
– 4 to 5 garlics, roughly smashed
– 1 cup of red wine (cheap wine will do the trick)
– Prepared pizza dough (….If you would like to make your own home made dough, here’s my authentic recipe =)
– Pizza toppings of your choice
In a frying pan, heat a bit of olive oil. Squeeze the sausages out of the casing directly into the pan. Add the onions and garlic. Cook, covered, on medium low until done. Once cooled, place everything into a food processor or blender and purée like pesto. Set aside.
Once your dough has risen in volume and is ready, divide it in half if you are making two pizzas and roll it out. Once it is as large as you would like it, carefully place on a greased oven tray. Next, place a large plate upside down in the center. Pipe, yes pipe, the sausage mixture all around the border of the plate.
Remove the plate and add the smoked cheese. Here in Italy, I used smoked “scamorza”, however you can use smoked mozzarella or whatever cheese you prefer.
Follow by topping your pizza according to your liking. Here, I added my famous home made tomato sauce (now this you’ve got to make if you have some time!) some onions, rucola (in English, “arugula”) and some grated sharp Italian cheese (like Grana Padano)…..I made it simple because I only have 5 seconds flat to do everything since my 1 year old follows me like a baby penguin wanting me to play with her =)
Preheat the oven to 200°C \ 400°F. Fold over the edges inwards towards the center. Drizzle the pizza with some olive oil. Top with a bit of oregano (optional) and place in the oven…..
And here she is! Mamma mia….and you can only imagine the delicious sausage and cheese flavor with every finishing crust bite!
Now, if you really want it Sicilian style, top your pizza with french fries! (Yes, you’ve died and gone to heaven =) Every Friday night, I try to make pizza topped with french fries and after a long work day for the hubby and my full day with the baby, it’s a delicious reward =)
