Today I wanted to share another pork chop recipe which is so simple and takes only minutes =) Everything bakes together and there are only 5 easy ingredients in the sauce….simple, healthy, all natural, and not to mention fast and furious!
Maestro, the ingredients please!…..
-Cubed potatoes, rinsed under cold running water (…..this is my secret to crispy potatoes =)
-Salt, to taste
……For the sauce……
-1 handful of parsley
-1\2 cup of olive oil
-5 to 6 large pieces of garlic (…..don’t reduce! =)
-Juice of 2 large lemons
-1\2 cup of white wine (……any cheap one will do)
Preheat the oven to 170°C \ 350° F. Place the cubed potatoes in an oven proof dish. Drizzle 2 to 3 TBSP of olive oil over the potatoes and toss so they are nice and coated. Salt the pork chops and lay them over the potatoes. In a separate bowl, add the parsley, wine, olive oil, garlic, lemon juice and blend for about 20 seconds using a blender until all the ingredients are incorporated and liquidy. Pour directly over the chops and potatoes. Do not mix….just let the sauce go wherever it wants =) Spead a few capers all around (optional) and bake for about 30-40 minutes or until the chops are cooked and potatoes are fork tender. That’s it!
And oh, the flavor of the potatoes! Mamma mia……=) =)
