Hi Everyone!
A while ago, my husband and I were complaining that we don’t eat enough fish, although we both love it. Yeah, you would think living in Sicily we’d be eating fish every other day, wouldn’t you? So we got ourselves dressed and out we went (in the horrid rainy weather we’ve been having the last several weeks) to a local “pesceria” (like a butcher shop…but for fish) in hunt for what is in season (yes, fish have seasons too =) We bought what would be “Cod” in English and I quickly thought of a way to prepare it while my almost 1 year old daughter was waltzing between my legs in the kitchen. For you mommy’s out there who need a quick and healthy way to prepare fish, or for just anyone who needs something tasty and snappy….here we go!
Maestro, the ingredients please!……
– 2 pounds of fresh fish, cut in chunks (…or however you normally like to buy your fish)
– 6-8 large pieces of garlic, smashed (…how do cook fish without it?)
– 1\2 cup of white wine (whatever you have on hand…the cheaper, the better, no worries)
– Handful of chopped parsley (be generous here)
– 3-4 Tbsp olive oil
– Juice of 2 large lemons, saving the lemons aside
-2-3 bay leaves (it’s optional…but I consider cooking with bay leaves the crown of Italian glory!)
-Salt, to taste
Now, just blend all the ingredients together using a blender and set aside. In an oiled oven proof dish….(….here’s where I bring out my trusty ol’ Pyrex which you’ve seen me do over and over…I won’t part with the thing!)….place your fish, and pour the sauce all over. Add your used lemons and bay leaves around the sides and along the fish….doesn’t it look gorgeous?
Bake in a preheated oven around 180°C or 350° until fish is nice and flaky….Mamma mia!
