Well, today I would like to show you how to make a deliciously simple and easy Mediterranean marinade for chicken breasts that are so moist and tender, even when grilled!
Here’s what you will need:
-1 LB or 1\2 kilo of thin, boneless chicken breasts
-1 cup of yogurt, whatever you would normally buy (I use low fat)
-4 crushed garlics
-2 TBSP olive oil
-1\2 TBSP of EACH dried oregano and rosemary
-1 TBSP dry Marsala wine (do not substitute, must be Marsala)
-Salt, to taste
Combine all of the marinade ingredients listed above. Dip each breast into the mixture, cover and leave to marinate at room temperature for 1-2 hours.
Then place each breast on a stove top grill set on medium-low heat for about 15-25 minutes or until done.
And mamma mia…..take a look at these chicken breasts!…..grilled to perfection and oh so moist! Ready to be served alongside a salad or some delicious oven roasted potatoes.
