I love french fries! I have to eat them at least once a week. Thankfully, my husband loves them too! Actually, here in Sicily, french fries are served as appetizers at restaurants =) =) I think Italians are second to consume the most potatoes after Americans! But we can’t eat them nice and  fried all the time, can we? (…..here’s where you answer, “sure we can!”…) No we can’t! Bad, bad french fries…..but thankfully, oven fries can be just as delicious! After many failed attempts, I believe I finally have it down….the best oven fries seasoned with oregano. So simple and so yummy, you would think they were fried!

Here’s how you do it:

Just slice some potatoes into sticks (medium thick), and place in a bowl. Run the bowl under water and swish the potatoes around. Drain the water, leaving the potatoes in the bowl.  (….this removes the starch and helps make them crispy once in the oven!). Toss with 2 TBSP olive oil and then singly line on a baking tray lined with parchment or baking paper. Sprinkle oregano generously over the potatoes sticks, turning them and sprinkling some more.  Place in a preheated oven set at 200 celsius (425 fahrenheit) for 20 minutes or until nice and golden. Serve with garlic mayo (see post) or whatever condiment you prefer!
