Mozzarella, Mozzarella…oh where art thou Mozzarella?!…….Who doesn’t like mozzarella? It’s mild, yet flavorful. Distinct, yet versatile. For those reasons, mozzarella has maintained its long reign as King of Italian Cheeses.

Now, let me introduce you to it’s offspring, mozzarelline….baby mozzarella balls! =)  Here in Italy, they are everywhere. In the USA, they can be found in specialty stores or large supermarkets. Have you ever tried making a salad out them? Delicious!

Here is a recipe for a salad with mozzarelline that takes only a few minutes to make and is just too pretty! =) There is nothing as colorful as plumpy red tomatoes, snow white mozzarelline balls, and a touch of green basil!

Ingredients:

-3 chopped tomatoes

-1 container of fresh mozzarelline balls

-1 TBSP dry basil, or a few small leaves (chopped) of fresh basil if in season

-1 TBSP balsamic vinegar

-2 TBSP olive oil

-Salt, to taste

Just mix all the ingredients together and let sit at room temperature for 10-15 minutes before serving to allow flavors to incorporate! Don’t forget some fresh baked bread alongside (see my bread posts)….you will need it for dunking! =)
