There is nothing like a wonderful pasta salad in the summer…..and one that’s made with fresh ingredients. Being the salad lover I am, especially in the summer, here is one salad you can make quickly and simply enough! =)
Ingredients (serves 2)
– Orecchini shaped pasta (……orecchini in Italian means “little ears”…..the pasta has been given this name because of their shape =) You can use any small shaped pasta however)
– 6 to 7 cherry tomatoes, quartered
– 1\2 small red onion, chopped or sliced
– 1 to 2 TBSP balsamic vinegar
– 3 to 4 large basil leaves, roughly shredded
– Olive oil
– Grated Italian cheese (for garnish)
Cook pasta until al dentè. Drain. Return to pot and toss with a bit of olive oil. Transfer to a dish to cool down. When cool, add the tomatoes, red onions, basil and balsamic vinegar. Toss and let sit for 15 minutes for the flavors to incorporate. Serve at room temperature. Garnish with grated Italian cheese.
