mussels in olive oil, wine, and garlic

Hi Everyone!

If you are looking for an easy fish recipe and can get your hands on some fresh mussels, here’s a dish you can make in minutes! It’s so delicious and easy, I’m sure it will be on your list of favorites! Let’s begin….

Maestro, the ingredients please!….

– 1 kilo (2 pounds) of fresh, cleaned mussels

– Juice of 1 large lemon

– 1\2 cup of white wine

– 4 to 6 large garlic pieces, grated (…I use a hand held cheese grater =)

– 3 to 4 TBSP olive oil

– Handful of chopped parsley

Rinse the mussels under cold running water and transfer to a large stockpot. Add 1\3 cup of water and the wine. Bring the mussels to a boil and then lower the heat to medium-low. Cook the mussels until all the shells have opened, about 15-25 minutes, depending upon the size of the mussels. Discard any shells that didn’t open. Drain the mussels and place in a large, shallow dish.

In a separate dish, place the lemon juice, parsley, garlic, and olive oil.

Mix well and  pour the sauce over the mussels. Toss the mussels. Serve alongside fresh bread for dunking =) That’s it!
