omlette with mushrooms, arugula, and prosciutto

Hi Everyone!

Today I wanted to share a delicious recipe that’s worth calling an omelette! I actually made it for dinner because I was tired of my boring old omelette which was one of those “what’s for dinner, dear?…an omelette….oh, uh, could we have something else?” type husband to wife question and answer. So now, I’ve triumphed and want to share my victory with the rest of the world =)  Shall we begin?

Maestro, the ingredients please!…..

– 1 pkg of puff pastry (how I love the stuff!)

– 3 to 6 eggs (depending on how eggy you like your omelette)

– 3 to 4 pieces of garlic (grated…and don’t be skimpy on the garlic now =)

– 2 cups of washed arugula

– 1 cup of sliced mushrooms

– 3-4 large slices of prosciutto

– 1\2 cup of sharp Italian cheese

– Olive oil

– Rosemary, oregano, salt\pepper…..all to your liking

Directions:

Grease the bottom of a baking dish with a bit of olive oil and lay out the puff pastry. In a skillet, add a bit of olive oil or butter and sear the mushrooms a bit. In a separate bowl, whisk the eggs, then add the salt\pepper, and cheese to the eggs just enough to incorporate everything together.

Going back to the puff pastry…..add the mushrooms, and then the arugula. Pour over the egg mixture. Then lay the prosciutto over so that it covers the omelette somewhat. Drizzle some olive oil over the and garnish with dry rosemary and oregano to your liking. Place in a preheated oven at 175°C \ 350° F until nice, golden and bubbly.

Doesn’t it look delicious? It’s so simple to put together and I’m sure your family will love it. My 13 month old absolutely loved it =) So go ahead and give it a try….
