Well, winter is approaching here in Sicily and what better that home made warm soup? Have you ever tried making your own chicken broth? First off, it’s really easier than you think. Secondly, store bought broth is laden with salt and has no nutritional properties……so give me a few minutes and I’ll show you how to make a delicious broth your family will love! =) Let’s begin!

Ingredients

-1 whole cleaned ORGANIC cut up chicken…..reserve the chicken pieces for another meal(s) and use the following for the broth: bones, cartilage, neck, and feet (yes feet!….just sprinkle salt on them first and rub them with some lemon, then wash the salt and lemon off under cold running water to get them nice and clean). 

Note: If you use an organic chicken chances are you won’t have to skim any white froth that floats to the top of the stock pot because there won’t be any. Otherwise, any chicken will do, but try to buy the most organic possible….it makes all the difference in the quality of the broth.

-2 carrots, peeled and chopped

-1 onion, chopped

-Parsley (handful, with stems)

-2 stalks of celery, chopped

-Fresh sage leaves (optional)

-Garlic flakes and red pepper flakes, according to your liking (I don’t use fresh garlic for the broth because I add the fresh garlic later when putting together my soup…..but you can throw in a few garlics into the broth if you like)

Directions:

Add your chicken parts and vegetables to the stock pot and fill with water.

Next, bring to a boil and then simmer (partially covered) for 1 to 1\2 hours.

Then, just filter out the veggies and chicken parts and you are left with an incredibly rich tasting broth ready for your soups! Just allow the broth to cool then portion and freeze =)
