My friend Daniela makes the BEST Torta di Mele (Italian apple cake) in existence. Really, she does! It’s super moist and just melts in your mouth. I had to beg for the recipe and promise to name my first born daughter after her….I hope she’s not reading this!!!…..but no seriously, she gave me the recipe and we actually put it together yesterday night for some friends who were over for dinner. It’s absolutely delicious =) So get your apron on, here we go!
Ingredients:
4 apples (….we used red apples, but you can use whatever kind you normally buy)
3 eggs (medium to large)
150 grams (5 oz) of sugar, plus more for garnish
100 grams (3.5 oz) of butter (softened), plus more for topping
150 grams (5 oz) of flour (all purpose)
15 grams ( 1 1\2 TBSP) of baking powder
Pinch of salt
1 1\2 TSP Cinnamon, plus more for garnish
Directions:
In a bowl, beat the eggs and sugar together until smooth in texture…..
Then add the softened butter and continue to beat…..
Incorporate 1\2 of the flour and continue to beat….
Add the rest of the flour, along with the salt, baking powder and cinnamon…..continue beating until well incorporated.
Grease\flour or line a pan with parchment\baking paper and pour the mix inside. Working fast to prevent browning, slice and layer the apples over the mix (….while cutting the apples, you could place the sliced ones in a bowl with a squeeze of lemon juice to prevent browning if you don’t have anyone helping you).
When done, sprinkle some additional sugar and cinnamon along with pats of butter. Bake at 180 celsius \ 350 fahrenheit for 45 minutes or until nice and golden.
When cool, garnish with powdered sugar.

What size baking pan is needed for this delicious sounding recipe?
Hi Ray! An 8 x 8 is a good size, although any size would do….the cake would just be a bit thicker or thinner depending upon the pan =)
