HI, I bought your book, just wanted to know the measurements for the filling ingredients in the foccace recipe? Is there a proportion for the ingredients or just to taste?. Also how much filling do I add to each sheet of dough, before I fold it over three times? Do I seal both ends?

I hope you enjoy the book! As for the measurements of the fillings, there are none…..fillings are to your liking. This is the same for the amount of the fillings…..some like fillings on the heavy side, others like just a bit of filling so they can taste the dough better. It’s all up to you. No, you do not need to seal the ends =)

Hello, I am considering retiring in Sicily, currently Triscina, but really I would like to be anywhere close to the ocean and safe. I love food, wine, and the outdoors. I know I can get these demands pretty much anywhere in Sicily, but do you have recommendations? I am married with two tennagers. So, the teenagers will most likely not be residing with us much longer. I would like a town larger enough to have some shops and a restaurant or two. Nothing large.

Hi Dustin, thanks for taking the time to write. Yes, in the province of Ragusa there are a lot of small towns. If you would like to be near the beach, you may like the town of Pozzallo (population: 25K). Its very touristy in the summer, yet very quiet the rest of the year. Or Modica (population: 60k). Both towns have everything you need. Modica has a hospital as well. Yet there are also many smaller towns in the province. The towns I mentioned plus others make up the province of Ragusa (where we live). It’s one of the more desired places to live because it offers small town life, close to the beach, yet all the amenities you would need. Hope this helps! =)

i have been looking for the recipe for the rotisserie chicken wity the potatoes and black olives ever since we left Sicily in 1980. we always would stop sand pick one up for dinner on Friday nights whe4n we lived in Belpasso. Would you happen to know the ingredients and instructions?
