spaghetti with parsley

Have you ever been left with some lingering parsley in the fridge? Here’s a quick and super delicious recipe for pasta that only has three fresh ingredients…parsley, olive oil, and garlic!

Prepare your pasta…in my case, I chose to make some spaghetti. While the pasta is boiling, smash 3-4 cloves of fresh garlic in a plastic bowl. Add 3-4 tablespoons of olive oil and add a palmful of fresh parsley (whole leaves, chopped or diced…however you wish). Mix the 3 ingredients well and set aside until the pasta is al dente. Drain and pour the parley mix over the pasta…mixing well. Serve with grated Italian sharp cheese, if desired. Delicious!
