I love popcorn shrimp……and with linguine, it’s a match made in Heaven! Now I added some other ingredients to make it flavorful and it turned out great! So try this delicious recipe and let me know what you think! =)
Ingredients:
-2 cups of frozen or fresh popcorn shrimp, no shell and cleaned
-1 cup of frozen peas (….Remeber the post of my harvesting peas at my in-laws? Well here was a chance to use some of them!)
-1\2 cup of white dry wine (…..Here in Italy, I buy cheap wine for cooking….the one I used is called COSTOZA and comes from the Veneto (Venice) region)
-1 red onion, sliced
-5 garlic, smashed
-2 TBSP parsley, chopped
-Olive oil
-Salt, to taste
-Packaged or fresh linguine
Directions:
Sauté the red onions and garlic in 1 TBSP olive oil until nice an golden.
Add the frozen peas, shrimp, wine, 2 TBSP olive oil and parsley. Mix a bit to incorporate. Cover and cook on medium low for 10 minutes. Lower heat to low and cook for another 15 minutes.
And here it is! =) Yummy looking huh?….
Now, boil the linguine and when finished, drain the water. Add the pasta to the shrimp mixture and toss to incorporate the pasta and flavors.
Serve with grated sharp Italian cheese of your choice!…sorry for the poor quality of this picture!

Update: To answer the question of what kind of pan I’m using, it’s a 12″ ceramic one. I have to tell you it really makes cooking much easier. Nothing sticks, I use less oil, and it’s healthier than other coated pans. Check out the benefits of cooking with ceramic pans. If money were no object, I’d buy a lot more! =)
