You don’t have to be Italian to love tiramisu =) It’s just one of those deliciously simple desserts that is light, yet rich. On Sunday, when I made this and took it with us for Mother’s Day to my in-laws, everyone loved it. Actually, by the time my mother in law finished distributing slices to everyone, the remaining slices in the dish were being devoured by the others….in 3 minutes flat, there was nothing left…..so, needless to say, it passed the authentic tiramisu test =)
NOTE: Although traditional Italian tiramisu calls for raw eggs, I do not include eggs because many individuals may have allergies or can’t have them. However, this recipe is delicious and you will NOT miss them, trust me….it’s “Italian” tested =) =)
Ingredients:
-500 gr mascarpone cheese
-100 gr brown sugar
-1 pkg savoiardi (lady’s fingers) biscuits
-1 cup freshly brewed and cooled coffee
-1 Tbsp rum or brandy
-Cocoa powder for sprinkling on top
-Chocolate chips (optional)
-Dark chocolate bar for grating (optional)
Directions:
Cream the sugar and mascarpone together for a few minutes on low using a hand held mixer. Set aside.
Place cooled coffee in a shallow bowl. Dunk each biscuit HALF WAY ONLY and place in the serving dish.
Next, dollop the cheese on top in various places and begin spreading all over to cover the biscuits with the back end of a spoon.
Then sprinkle some coffee on top.You can also sprinkle some chocolate chips along the sides of the tiramisu for looks (optional).
Then repeat with another layer of biscuits and cream. Sprinkle the top with with powdered cocoa and, using a veggie peeler, shave a bit of chocolate to top for garnish (optional).
