I love all things grilled….I think it’s the grill marks make my mouth water =D Since buying my stove top grill pan, I’ve used it like crazy. I love it so much that only I can touch the pan…..my husband knows better! I’ve even got it meticulously kept in the cabinet between kitchen towels so the other pans don’t scratch it…….but today, I got out my prized possession to show you how to make deliciously grilled eggplant slices using your stove top grill….and it’s super easy =)

First, the marination…..ahhhhh! Note: This marination is very light and won’t alter the “natural” taste of the eggplant.

Ingredients:

– 3 to 4 eggplants, thinly sliced (….about 1\4 inch slices)

– Handful of fresh herbs…..whatever you have growing in the garden or like to buy…..or 2-4 TBSP of dried herbs (….I have mint, basil and sage growing right now, so that’s what I’ve used)

– 4 to 5 garlics, thinly chopped

– Olive oil

Directions:

Slice your eggplant(s) and place in a glass pan, drizzling a bit of olive oil as you work along. Once done slicing, drizzle a bit more olive oil, toss. Add garlic and herbs….toss some more. Cover tightly with saran wrap and let marinate for 30 minutes at room temp.

Next, heat up the grill on medium and lay down the slices. You could add some of the marinated herbs on top if you wish, or omit them….it’s up to you (Just toss them afterwards)

Once nice and full of grill marks, remove and serve!

They are great in a salad, sandwich (with garlic mayo…read my 2 INGREDIENT RECIPE: GARLIC MAYONNAISE post), alongside a meal, in a burger…..the possibilities are endless! And everyone will think you made them on the BBQ =D
