Hi Everyone!
Well, now that our daughter has started eating soft foods, I am excited to share with you an easy and delicious way to prepare creamy vegetable purée. Our daughter, Rebecca, loves meat….so I add this purée to her organic jar of meat. I’ve also added cream of rice to the purée….basically any combination you prefer will be fine as this purée is very versatile =) I try to incorporate one new veggie every week as recommended by Rebecca’s paediatrician.
In a stock pot, dice up some carrots, celery, potatoes, and zucchini (….make sure all veggies are peeled first, and I remove any seeds found in the zucchini) and fill the pot with water.
Bring to a boil and then reduce to a simmer for about 40 minutes until all veggies are nice and tender. When done, strain out the celery. Then blend (I use an immersion blender) everything together. (If you need more water, just add a bit at a time until you get a creamy consistency)
…And here you are….a purée that’s nice and creamy. Nothing but veggies and water. Her meat jars contain salt, so I don’t add any.
I make enough so that it lasts for 4 days…I prefer to have her eat fresh food rather than frozen, however I’m sure you can freeze it if you need to. When serving, I add her meat, some cream of rice, and 1\4 of a teaspoon of olive oil (….olive oil is very healthy and is highly recommended by Italian paediatricians) Rebecca loves it =)
