chickpea burgers

Hi all =)

Well, I love hummus and that’s about the only way I really eat chickpeas. However, since I have a lot of organic dry chickpeas, I was thinking of other delicious ways to serve it besides in hummus or in a salad. And alas, it happened…burgers! Quick, easy and delicious using a stove top grill (or you can BBQ them if you have the time).

Here’s what you’ll need:

-1 cup of cooked chickpeas (home cooked or canned)

-1 egg

-2 Tbsp olive oil

-2 Tbsp parsley (diced or whole leaves)

-3 Tbsp diced basil

-3 garlics, smashed

-Dry bread crumbs

-Salt \ pepper, to taste

-Red pepper flakes (optional)

 

Place all the ingredients, along with a couple Tbsp of bread crumbs, in a food processor or mixer. Mix until mixture is smooth, but firm, like dough….you many need to add additional breadcrumbs or a bit of water to achieve this.

Next, preheat your stove top grill (coat the grill with a bit of oil to prevent sticking). Form your patties as desired and place on the grill.

Grill for a few minutes on each side. The burgers will be ready when you see grill marks…..I love grill marks, makes my mouth water! See? Easy peasy =) Now just dress up the burger as you prefer…..delicious.
