Last night, I couldn’t decide what to cook for dinner….and so after a few minutes at staring in the fridge, I pulled out some veggies and a frittata was born! =) It turned out soooo delicious….and I wanted to share it with you!
-1 cup of mushrooms, sliced
-1\4 cup of parsley, chopped
-3 to 4 garlics, sliced or slivered
-1 onion, sliced
-2 TBSP fennel seeds
-Salt\pepper to taste
Sauté the onions for a few minutes, then add the garlic and sauté for a few more minutes…..
Next, in a separate container, crack open the eggs and with a fork, simple beat just to break them apart (do not whisk). Pour the eggs over the sautéd onions and top with the parsley. Cover and cook on medium low until frittata is set.
Ahhhhh…..and here is it! It was so tasty! =)
