Brrr….it’s so cold! In cold weather, I can hardly get enough soup. I just love the warmth of hot soup along fresh baked bread! So here is my latest soup…..creamy roasted vegetable bean soup you can make in just minutes with any and all veggies you have on hand! This is so good and so easy!
-1 can of cooked beans (of your choice….I used kidney beans)
-7 peeled, whole pieces of garlic
-1/2 cup chopped parsley
-Any and all chopped veggies you would normally add when making soup ( I added onions, corn, carrots, peas, and potatoes)
-salt/pepper, to taste
Here’s what you do…..
Just add a bit of olive oil (about 2 TBSP) and saute the veggies for about 5 minutes until nice and golden.
Add the beans and continue to cook for a few more minutes on medium heat. Add just enough water to puree the soup either using an immersion blender (my favorite!) or a normal blender.
And here you have it….nice and hearty! And oh so yummy =)
Now, all you need so some home made pagnotte bread and you are all set!
