I’ll hand it to you….beets aren’t exactly number one on the top ten salad list =) Actually, I bought some beets for the first time in my married life just last week. I know they are healthy, I was thinking to myself…but do I really want to eat beets? Well, I plunged in and bought them.  After adding a few ingredients I had in the fridge, I tell you, I was a skeptic turned believer!

So here is a very simple recipe that takes less than 5 minutes to prepare and is simply a great way to eat beets!

What you will need:

– 3-4 medium sized boiled beets

– 1\2 cup of Italian parsley, chopped

– 2-3 TBSP of olive oil

– 1 TBSP lemon juice

– 2-3 garlics, sliced…(or more if you like it garlicky….just don’t go kissing anyone anytime soon! =)

-Pinch of salt, to taste (optional)

Just dice your beets into cubes and add the remaining ingredients. mix well, and let the flavors marinate for at least 30 minutes at room temperature before serving.
