Merry Christmas from Sicily!

Well, as Christmas approaches, there is much to do for a lot of people. So how about a simple recipe for a quick pasta? It won’t take more than 30 minutes, that way, you can get back to Christmas shopping, wrapping, decorating, etc! Here we go…..

Ingredients:

1-2 cups of good quality, fresh ricotta cheese

1-2 cups of broccoli florets, washed (….I bought a purple broccoli from the street market, but you can use normal green broccoli)

1 small onion, sliced

2-4 garlics, smashed  (….you could add more or less depending on how pronounced you would like the flavor)

1\3 cup of marsala wine

(Cooked pasta of your choice)

Directions:

Place a bit of olive oil or butter (whatever you normally use) and wilt the onions and broccoli in a pan until they turn golden.

Then add the garlic and marsala wine.  Stir. Cover and set flame on low for a few minutes. Then add the ricotta. Cover and continue to cook on a low flame for a few more minutes until all the ingredients have incorporated nicely.  Delicious! Now just add the mix to your cooked pasta!
